We have friends who had white peacocks and pea hens, but they kept "running" away into the woods and eventually never returned (coyotes probably). Before they ran away for good we had some pea hen scrambled eggs. Have you ever seen a pea hen egg? They are pretty big and kind of pointy at one end and have enormous yolks--at least relative to a chicken egg.
